The Recipe Redux theme for this month is frozen desserts. I thought of making popsicles and got inspired at the market when I spotted some beautiful acerola cherries. Here in the Dominican Republic we call them “cerezas” and they’re eaten as is or used to make juice. The amazing acerola cherry contains 60 times the vitamin C per gram of flesh of a citrus. It also contains vitamins A, B1, B2 and B3 as well as carotenoids and bioflavonoids which provide very important nutritive value and a possible use as an antioxidant. [source]
Acerola seeds are soft and the flesh is attached to it, they can’t be pitted so you just blend the whole cherries and strain to obtain their precious juice. I added chia seeds for texture and lime juice because I love tart flavors
Acerola chia lime popsicles
Ingredients:
- 6 cups of acerola cherries
- 1 cup water
- 3 limes
- 2 tablespoons of chia seeds
- 10 grams of stevia
Preparation:
- Wash cherries and blend with the cup of water.
- Strain the juice to remove solids, add the lime juice, chia seeds and stevia.
- Pour into popsicle molds and freeze.
